What exactly is mead?
Mead is made by fermenting honey with water and yeast. Unlike beer (made from grains) and wine (made from grapes), the sugar supply for fermentation in mead comes entirely from honey.
This gives mead a unique flavor that ranges from sweet to dry, depending on the type of honey and the fermentation method.

What does mead taste like?
The taste of mead depends on several factors, such as:
✔️ The type of honey used (e.g. lime honey vs. flower honey)
✔️ Added herbs, fruit or wood aging (maturation in wooden barrels is our specialty!)
✔️ The fermentation and maturation time
At De Mederie we only make barrel-aged mead, which means that our mead gains extra depth and complexity from maturation in wooden barrels.
