Blend of organic cider apples of Normandy that we went to pick up in october 2022 with handpicked local Belgian apples from our own trees and local apple trees 🍏🍎🍐
It is spontaneously fermented for 3 months (without added yeast) and aged for a couple of months in used wine barrels. De Mederie is a cold, badly insulated place in winter which is perfect for the fermenting & ageing cider and mead, just a bit cold for the brewer.
